  • 12 ounces full-fat block cream cheese, softened at room temperature (340 grams)
  • 5 cups powdered sugar (confectioners’ sugar), adjust to taste (575 grams)

  • ¼ tsp ground cinnamon, or a pinch more, to taste

Instructions

  1. Make the Brown Butter: In a light-colored nonstick pan over medium heat, melt the cubed salted butter. Continue cooking, stirring constantly, for about 5 minutes. The butter will foam, then bubble, and finally, the milk solids at the bottom will turn a deep golden brown and release a fragrant, nutty, caramely aroma. Immediately remove the pan from the heat and pour the brown butter into a separate heatproof bowl to cool completely to room temperature. It can remain liquid or slightly solidify, but it must not be hot when used in the frosting.
  2. Prepare for Baking: Preheat your oven to 350°F (175°C). Line a standard 12-cup muffin pan with paper cupcake liners.
  3. Mix the Cupcake Batter: In a large mixing bowl, whisk together the room-temperature eggs, dark brown sugar, vegetable oil, real maple syrup, vanilla extract, and the 15-ounce can of pumpkin puree until well combined and smooth.
