This isn’t just a meal; it’s an experience. The aroma filling your kitchen as it bakes, the golden-brown crust, and the irresistible gooey cheese pull are all part of the magic. It’s the kind of comforting food that brings people together, making it perfect for holiday dinners, special occasions, or simply a cozy weeknight treat.

Why This Homemade Lasagna Will Become Your Go-To Recipe

Once you try this recipe, you’ll understand why it’s a cherished favorite. Its combination of profound flavor, ease of preparation, and adaptability makes it stand out.

  • Mom’s Secret for Unrivaled Flavor: The Slow Simmer – This homemade lasagna recipe is far simpler to master than you might imagine. The most “challenging” aspect is allowing the hearty ground beef and pork meat sauce to gently simmer for a full hour. This crucial step is what my mom always insisted on, and for good reason—it deepens the flavors, transforming a good sauce into an exceptional one. Don’t skip it; the rich, complex taste is well worth the wait!
  • The Quintessential Comfort Food – Imagine sinking your fork into tender pasta, blanketed by savory tomato meat sauce and a luxurious trinity of cheeses. This classic lasagna isn’t just food; it’s a warm, culinary embrace. It’s the perfect dish to bring warmth and joy to any table, especially on chilly evenings or during festive celebrations.
  • Remarkably Easy to Customize – One of the greatest advantages of this recipe is its flexibility. Want to make it lighter? Opt for lean ground turkey. Prefer a meatless meal? Simply omit the meat for a delightful vegetarian lasagna. For those with dietary restrictions, gluten-free noodles are a fantastic option. And if you’re short on time, using a high-quality jarred pasta sauce can significantly speed up the cooking process without sacrificing too much flavor. From a small batch for an intimate family dinner to a doubled recipe for a holiday feast, this lasagna adapts effortlessly to your needs.

Essential Ingredients for Your Perfect Lasagna

Creating an unforgettable lasagna starts with quality ingredients. While the full recipe with precise measurements is provided in the recipe card below, here’s an overview of the key components that bring this dish to life:

  • Ground Beef and Ground Pork – The combination of these two meats creates a depth of flavor that’s unparalleled. Using lean cuts is advisable to prevent the sauce from becoming overly greasy, ensuring a perfectly balanced texture and taste.
  • Aromatic Herbs: Oregano and Basil – These classic Italian herbs are fundamental to the sauce’s authentic flavor. While dried spices are convenient and deliver consistent results, you can certainly opt for fresh chopped herbs. If using fresh, remember to double the quantity for a more vibrant, potent aroma and taste.
  • Canned Whole Tomatoes – The backbone of any great red sauce. Whole peeled tomatoes, when crushed by hand or with a spoon, offer a rustic texture and rich, sweet tomato flavor. Canned crushed tomatoes are also an excellent alternative if you prefer a smoother sauce.
  • Tomato Paste – This concentrated tomato goodness is vital for adding a deep, intense tomato flavor and a beautiful richness to the sauce. Whether from a can or a tube, a high-quality tomato paste makes a significant difference.
  • Lasagna Noodles – The canvas for your layers! You have the choice of traditional flat noodles, which require pre-boiling, or the more decorative wavy-edged noodles. Both work beautifully; just ensure they are cooked al dente before assembly to prevent a mushy final product. No-boil noodles are also an option for convenience, though they may yield a slightly different texture.
  • The Italian Cheese Trio – This recipe calls for a *chef’s kiss* combination that guarantees ultimate creaminess and flavor.
    • Ricotta Cheese: Provides a light, creamy texture to the cheese layers.
    • Mozzarella Cheese: Delivers that irresistible, gooey, stretchy melt.
    • Parmesan Cheese: Adds a sharp, salty, umami depth that perfectly complements the other cheeses and meat sauce.

Creative Recipe Variations to Explore

This lasagna recipe is incredibly forgiving and open to modification, allowing you to tailor it to your dietary needs or personal preferences.

  • Dairy-Free Adaptation – While I haven’t personally crafted a dairy-free version of this specific recipe, the culinary world offers fantastic alternatives. Experiment with your favorite, trusted non-dairy substitutes for ricotta, mozzarella, and Parmesan. Be sure to check reviews and select products known for their melting and textural qualities in baked dishes. Please share your successes in the comments!
  • Ground Meat Alternatives – The meat sauce is wonderfully adaptable.
    • All Beef: You can easily omit the ground pork and use all ground beef for the meat sauce.
    • Leaner Options: For a lighter version, swap both beef and pork for ground turkey or a mix of ground turkey and lean ground beef. This still delivers a satisfying texture and flavor, similar to what you might find in a delicious Slow Cooker Chili Recipe.
  • Vegetarian Lasagna – Transform this into a delectable vegetarian meal by simply omitting the meat entirely. You can enhance the sauce with finely diced mushrooms, zucchini, or bell peppers for added texture and nutrients, or even a plant-based ground meat alternative.
  • Time-Saving with Jarred Sauce – In a rush or simply not in the mood to create a sauce from scratch? You absolutely can use your favorite store-bought pasta sauce to make this easy homemade lasagna recipe even more convenient. Begin by browning the aromatics (onions and garlic) and any ground meat you choose, then stir in the jarred sauce and let it simmer for a few minutes to meld the flavors before layering.

Crafting the Best Lasagna: A Step-by-Step Guide

Making a truly memorable homemade lasagna is a rewarding process. Follow these steps for perfect results every time.

Step 1: Develop the Flavorful Meat Sauce.
Begin by heating olive oil in a large Dutch oven or heavy-bottomed pot over medium heat. Add your diced yellow onion and cook until softened and translucent, about 5-7 minutes. Then, add the ground beef and ground pork, breaking up the meat with a spoon as it cooks. Brown the meat thoroughly, draining any excess fat if necessary. Stir in the minced garlic and cook for another minute until fragrant.

Next, it’s time to build the rich tomato base. If using whole canned tomatoes, gently crush them with your hands or a potato masher directly in the pot, or chop them roughly beforehand. Add the crushed/whole tomatoes, tomato paste, water, salt, pepper, dried oregano, and dried basil to the pot. Stir everything together until well combined. Bring the sauce to a gentle simmer, then reduce the heat to low, cover, and let it cook for at least 60 minutes. This slow simmer is crucial for developing a deep, rich, and cohesive flavor.

While your meat sauce is simmering, prepare your lasagna noodles. Cook them according to package directions until they are al dente. It’s a good idea to cook 2-3 extra noodles than you think you’ll need, just in case some tear during handling. Once cooked, drain them and lay them out flat on a clean surface, such as a large cutting board or baking sheets, to prevent them from sticking together.

Step 2: Expertly Assemble Your Lasagna.
Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius). Lightly grease an 8×8 inch or 9×9 inch baking pan with cooking spray or a little olive oil. This recipe is designed for a smaller pan, yielding about 9 servings. If you’re using a 9×13 inch pan, you’ll need to double the recipe ingredients accordingly.

Before you start layering, set aside approximately 1 ounce each of shredded mozzarella and grated Parmesan cheese. This reserved cheese will be used for the very top layer, ensuring a beautiful golden crust.

Now, let’s build the layers:

  1. Spread a thin layer of meat sauce on the bottom of the prepared baking dish. This prevents the noodles from sticking.
  2. Arrange three cooked lasagna noodles side-by-side over the sauce, ensuring the bottom of the pan is completely covered.
  3. Spoon about one-third of the remaining meat sauce evenly over the noodles.
  4. Dollop one-third of the ricotta cheese mixture (if you’ve mixed it with any seasoning, otherwise just spoonfuls of plain ricotta) over the sauce. Since ricotta is thick, apply it in small spoonfuls rather than trying to spread it, which can tear the noodles.
  5. Sprinkle one-third of the mozzarella cheese and one-third of the Parmesan cheese over the ricotta and sauce.
  6. Repeat this layering process two more times: noodles, sauce, ricotta, mozzarella, and Parmesan.
  7. For the final layer, place the last set of noodles, cover generously with the remaining meat sauce, and then sprinkle with the reserved mozzarella and Parmesan cheeses. This top layer of cheese will bake into a golden, bubbly perfection.

Step 3: Bake to Golden Perfection.
Cover the baking dish loosely with aluminum foil (you can lightly spray the underside of the foil with cooking spray to prevent cheese from sticking). Bake the lasagna for 40-45 minutes. During this time, the sauce will get bubbly, and the cheese will start to melt through the layers. It’s a good idea to place a baking sheet or a larger pan underneath your casserole dish to catch any potential sauce drips, keeping your oven clean.

After 40-45 minutes, remove the foil and continue baking for another 10-15 minutes, or until the top cheese layer is melted, golden brown, and delightfully bubbly. For an extra crispy, beautifully browned cheese crust, you can turn on the broiler for 1-2 minutes at the very end. However, watch it very carefully during this stage, as cheese can go from perfectly golden to burnt in a matter of seconds!

Serving and Storing Your Delicious Lasagna

The anticipation is part of the pleasure, but a little patience here makes a big difference.

Resting and Serving – Once out of the oven, let the lasagna set for 10-15 minutes before cutting and serving. This crucial resting period allows the layers to settle and the cheeses to firm up slightly, ensuring clean, intact slices. You can loosely tent a piece of aluminum foil over the dish during this time to keep it warm.

Serve each generous slice with a fresh sprinkle of grated Parmesan cheese and finely chopped fresh parsley or basil for a burst of color and herbaceous aroma. For the ultimate Italian meal experience, I highly recommend pairing your lasagna with some quick and easy garlic parmesan knots, classic garlic bread, or a simple crisp green salad with a vinaigrette dressing to cut through the richness.

Storing Leftovers – Leftover lasagna is often even more delicious the next day! Store any remaining portions in an airtight container or tightly covered with plastic wrap in the refrigerator for up to 5-6 days. For longer storage, lasagna freezes exceptionally well. Portion cooled lasagna into freezer-safe containers, or wrap individual slices tightly in plastic wrap and then foil. It will keep in the freezer for up to 2-3 months. Thaw overnight in the refrigerator and reheat gently in the oven or microwave until heated through.

Expert Cooking Tips for Lasagna Mastery

Achieve lasagna perfection with these insider tips and tricks.

  • The Indispensable Oven Thermometer – Your oven’s internal thermostat might not always be accurate. An oven thermometer is an inexpensive tool that will tell you if your oven is actually running at the temperature you set it to. Accurate oven temperature is absolutely crucial for most baking, ensuring your lasagna cooks evenly and thoroughly. I keep an oven thermometer in my oven at all times to monitor its calibration.
  • Adjusting for Your Crowd – This recipe, as written, perfectly fills an 8×8 inch pan and yields approximately 9 generous servings. This is a halved version of my mom’s original recipe, which called for a 9×13 pan – sometimes too much for a smaller household!
    • For a larger group: Simply double all the ingredients and bake it in a classic 9×13 inch baking dish.
    • For a truly small batch: You can further halve the 8×8 inch version, perhaps using smaller individual gratin dishes or a loaf pan, which would be ideal for 2-4 servings.
  • Smart Meat Sauce Strategy – The rich meat sauce is arguably the star of the show, and it’s excellent for meal prepping. I often make a full batch of the meat sauce (as if I were making a 9×13 lasagna) and then divide it. I use half for an 8×8 inch pan of lasagna immediately and freeze the other half for a future lasagna dinner. This makes your next homemade lasagna assembly incredibly quick and easy!
  • Noodle Nuances – While the recipe calls for traditional noodles that need boiling, you can use no-boil lasagna noodles for convenience. If using no-boil, ensure your sauce is slightly more liquidy to provide enough moisture for the noodles to cook.

Frequently Asked Questions About Homemade Lasagna

Do I have to boil lasagna noodles before making lasagna?

I personally prefer and recommend using traditional lasagna noodles that require pre-boiling. This method allows you precise control over their doneness, ensuring they are perfectly al dente—tender yet with a slight bite—which prevents the lasagna from becoming mushy. However, for maximum convenience, you can certainly use no-boil lasagna noodles. They are designed to cook in the moisture of the sauce during baking and can produce a delicious result, making this easy homemade lasagna even quicker to prepare!

What are the correct layers for lasagna?

The optimal layering technique is crucial for both structure and flavor distribution. The best way to layer a classic lasagna is to start with a thin coating of meat sauce at the bottom of the baking dish to prevent sticking and add a base flavor. Then, lay your cooked lasagna noodles, covering the bottom completely. Follow with a generous layer of meat sauce, then dollop small spoonfuls of the ricotta cheese mixture, followed by a sprinkle of mozzarella and Parmesan cheeses. Repeat these layers (noodles, sauce, ricotta, mozzarella, Parmesan) two more times. Always finish the lasagna with a final layer of noodles topped with remaining meat sauce and a generous amount of mozzarella and Parmesan cheese, which will melt into a golden, bubbly crust.

Can I make lasagna ahead of time?

Absolutely! Lasagna is an excellent make-ahead meal. You can assemble the entire lasagna up to 24 hours in advance, cover it tightly with plastic wrap and aluminum foil, and store it in the refrigerator. When you’re ready to bake, let it sit at room temperature for about 30 minutes to an hour while your oven preheats, then bake as directed, potentially adding an extra 10-15 minutes to the covered baking time since it’s starting cold. You can also make the meat sauce a few days ahead and store it in the fridge, assembling the lasagna closer to baking time.

How do I prevent watery lasagna?

Several factors can contribute to watery lasagna. To avoid this, make sure your ricotta cheese is well-drained if it seems excessively wet – some brands are wetter than others. You can place it in a fine-mesh sieve lined with cheesecloth for 30 minutes to an hour to remove excess liquid. Also, ensure your meat sauce has simmered sufficiently to thicken; a thin sauce will make your lasagna watery. Don’t overcook your noodles, as overly soft noodles can absorb less liquid. Lastly, and perhaps most importantly, allow the baked lasagna to rest for 10-15 minutes before slicing. This allows the hot liquids to redistribute and the layers to set, preventing a runny mess when you cut into it.

Special Tools for Lasagna Success

While you don’t need a professional kitchen, a few key tools can make your lasagna-making experience smoother and more enjoyable.

  • Dutch Oven – A sturdy, heavy-bottomed Dutch oven is my go-to for developing the deeply flavored meat sauce. Its excellent heat retention and even heating capabilities are ideal for the low and slow simmering required to build complex flavors.
  • Baking Pan – You’ll need an oven-safe baking pan. This recipe is perfectly suited for an 8×8 inch or 9×9 inch pan for the smaller batch, or a classic 9×13 inch pan if you’re doubling the recipe for a larger crowd. Ensure it’s deep enough to accommodate all those delicious layers!
  • Cheese Grater – While pre-shredded cheeses are convenient, grating your own mozzarella and Parmesan from blocks can significantly enhance the melt and flavor of your lasagna. A box grater or a food processor with a grating attachment makes quick work of this task.

Mom’s Easy Homemade Lasagna

By Stephanie Simmons

The best homemade lasagna! Made with layers of an easy homemade meat sauce, a mix of mozzarella, ricotta, and parmesan cheese, and TONS of flavor! This recipe can be scaled up or down to feed whatever size crowd you have and it’s always a hit!

Prep: 20 mins
Cook: 55 mins
Sauce Simmering: 1 hr
Servings: 9 slices

Ingredients

For the Meat Sauce

  • 2 TBSP olive oil
  • 1/4 lb ground beef (lean)
  • 1/4 lb ground pork (lean)
  • 3/4 cup diced yellow onion
  • 1 large clove garlic, minced
  • 3/4 tsp dried oregano
  • 3/4 tsp dried basil
  • 14 oz can whole peeled tomatoes, crushed by hand
  • 9 oz can/tube tomato paste
  • 1/2 cup water
  • 1/2 to 1 tsp salt, to taste
  • 1/4 to 1/2 tsp black pepper, to taste

For the Rest of the Lasagna

  • 12 lasagna noodles, traditional (boiled according to package directions)
  • 1 lb part-skim ricotta cheese
  • 15 oz shredded mozzarella cheese
  • 4 oz grated Parmesan cheese

Instructions

  1. Make the Meat Sauce:

Add olive oil to a large Dutch oven or heavy-bottomed pot over medium heat. Add the diced yellow onions and cook, stirring occasionally, until tender and translucent (about 5-7 minutes). Add the ground beef and ground pork. Cook, breaking up the meat with a spoon, until the meat is browned through. Drain any excess fat if needed. Stir in the minced garlic and cook for 1 minute until fragrant.

Add the crushed whole tomatoes (or finely chopped), tomato paste, water, salt, pepper, dried oregano, and dried basil to the pot. Stir to combine. Bring the sauce to a gentle simmer, then reduce the heat to low, cover, and let it simmer for at least 60 minutes, stirring occasionally. This long simmer is key for flavor development.

While the sauce simmers, cook your lasagna noodles according to package directions until al dente. Cook 2-3 extra noodles in case some tear. Once cooked and drained, lay them out flat on a cutting board or clean surface to prevent sticking.

  2. Assemble the Lasagna:

Preheat your oven to 375°F (190°C). Lightly grease an 8×8 or 9×9 inch baking pan with cooking spray.

Reserve about 1 ounce each of the shredded mozzarella and grated Parmesan cheese for the very top layer.

Spread a thin layer of meat sauce on the bottom of the prepared pan. Arrange three cooked lasagna noodles side-by-side to cover the bottom of the pan completely. Evenly spread about one-third of the remaining meat sauce over the noodles. Dollop one-third of the ricotta cheese over the sauce (it’s hard to spread, so small spoonfuls work best). Sprinkle with one-third of the mozzarella and Parmesan cheeses.

Repeat this layering process two more times: noodles, sauce, ricotta, mozzarella, and Parmesan. For the final top layer, place the last set of noodles, cover generously with the remaining meat sauce, and then sprinkle with the reserved mozzarella and Parmesan cheeses.

  3. Bake the Lasagna:

Cover the baking dish loosely with aluminum foil (you can lightly spray the underside of the foil to prevent cheese from sticking). Bake for 40-45 minutes, or until the sauce is bubbly around the edges. It’s a good idea to place a baking sheet underneath the casserole dish to catch any potential sauce drips.

Remove the foil and continue baking for another 10-15 minutes, or until the top cheese layer is melted, golden brown, and delightfully bubbly. For an extra crispy, golden crust, you can turn on the broiler for 1-2 minutes at the very end, but watch it very carefully to prevent burning.

  4. Serve & Store:

Once baked, remove the lasagna from the oven and let it set for 10-15 minutes before cutting into slices. You can loosely tent it with foil during this time to keep it warm. This resting period helps the layers set, making for cleaner slices.

Serve immediately, garnished with fresh parsley or basil if desired. Store any leftovers tightly covered in the refrigerator for 5-6 days. Lasagna also freezes beautifully; simply portion and wrap well for up to 2-3 months.

  5. Make Ahead & Yield Adjustment Tips:

The meat sauce can be made a day ahead and stored in the fridge until you’re ready to assemble and bake the lasagna.

You can easily double this entire recipe and bake it in a 9×13 inch pan to feed a larger crowd. Alternatively, make a full batch of the meat sauce and freeze half for later, using the other half for the 8×8 inch lasagna yielded by this recipe.
