  • 3 tsp baking soda
  • 1 and 1/2 tsp baking powder
  • 3/4 tsp salt
  • 2 tbsp DeLallo Instant Espresso Powder
  • 1 and 1/2 cups full sour cream, at room temperature , 360 grams
  • 1/4 cup milk, at room temperature , 60 mL, I used 2%
  • 4 large eggs, at room temperature
  • 1/2 cup vegetable oil , 106 mL
  • 1 and 1/2 tsp vanilla extract

For the Frosting:

    Tip: If your frosting becomes too soft to work with at any point, simply pop it back into the fridge for a bit to firm up before continuing.

  • Serve & Store: Decorate the top of the chilled cake with elegant white chocolate shavings or curls, and fresh berries if desired. Serve the cake once chilled as directed above, slicing into as many portions as you wish. Store any leftovers in an airtight container (or on a cake plate with plastic wrap pressed directly over the cut portion) in the fridge for 3-5 days to maintain freshness and moisture.
  • Make Ahead Tips: The chocolate fudge frosting can be prepared 1-2 days in advance. Cover it tightly and store in the fridge. Before use, let it come to room temperature for a short period, then beat it with your mixer to restore its spreadable consistency. Cake layers can also be baked 1-2 days ahead. Once completely cooled, place each layer on a plate, insert 2 toothpicks into the top of each layer (this prevents plastic wrap from sticking to the moist top), and cover tightly with plastic wrap. Store at room temperature overnight, or in the fridge for up to 2 days.

Chocolate Curls: To create beautiful chocolate curls, melt 3 ounces of chopped white chocolate with 1 tablespoon of shortening or vegetable oil. Heat in 20-second microwave intervals, stirring after each, until the mixture is perfectly smooth. Pour this melted chocolate over the clean backside of a cookie sheet, spreading it as thinly and evenly as possible with an offset spatula. Place the sheet in the freezer for a few minutes; the goal is for it to be solid, but still pliable enough that you can just barely leave a fingerprint without creating a deep indentation. Then, using a cookie flipper or a similar tool with a blunt metal edge, scrape down the sheet pan (from the short side across, to cover the longest distance) to form elegant curls. If the chocolate breaks, it’s too cold – let it sit out for about 30 seconds and try again. If it becomes too soft and smears, quickly pop it back into the freezer for a moment. Handle the curls as minimally as possible, and transfer them to a plate to freeze until you are ready to use them for decorating your cake.
