  • 2/3 cup Baileys Irish Cream (160 grams, must be refrigerated after opening)

  2. Make the Chocolate Cake: Measure the Baileys into a 2-cup glass measuring cup. Microwave in 20-second intervals, stirring between each, for about a minute total, or until the liquid is steaming hot. Whisk in the cocoa powder until completely dissolved and smooth. Set aside to cool slightly to room temperature. In a large mixing bowl, whisk together all the dry ingredients (flour, corn starch, both sugars, baking soda, baking powder, salt, and espresso powder). In a separate small bowl, lightly beat the egg. Add the beaten egg, milk, sour cream, vegetable oil, vinegar, and vanilla extract to the dry ingredients, along with the now warm (not steaming hot!) cocoa and Baileys mixture. Whisk until just combined. A few small lumps are acceptable; do not overmix.
