- 1 TBSP granulated sugar
- 1 and 1/4 tsp active dry yeast
- 1 and 1/4 cups all-purpose flour
- 1 tbsp olive oil
- 1/2 tsp cinnamon
- 1/2 tsp salt
- 1/2 tsp vanilla extract
For the Pear Filling
- 3 medium ripe pears, about 4 cups, sliced
- 1 and 1/2 tbsp salted butter
- 2 tbsp all-purpose flour
- 1/3 cup brown sugar, packed
- 1 and 3/4 tsp cinnamon
- 3/4 tsp ground ginger
- 3/4 tsp nutmeg
- 1/4 tsp ground cloves
- 1/8 tsp allspice
- a pinch of salt
- 1/2 tsp vanilla extract
For the Cinnamon Streusel
- 3 tbsp cold salted butter
- 2 tbsp + 1 tsp olive oil
- 1/2 cup + 2 tbsp all-purpose flour
- 1/4 cup white whole wheat flour, can sub for all-purpose
- 1/3 cup brown sugar, packed
- 1/4 cup granulated or cane sugar
- 1/4 tsp salt
- 1/4 tsp cinnamon
For the Glaze
- 2 tbsp salted butter, melted
- 1 tbsp pure maple syrup
- 1/2 tsp vanilla extract
- 1/2 cup powdered sugar
- tiny pinch of salt + cinnamon
Instructions

Make the Pizza Dough: Add the warm water and tablespoon of sugar to a medium bowl and whisk together. Add the yeast and do not mix – let sit for 5 minutes until creamy and foamy. Stir in the flour, olive oil, cinnamon, salt, and vanilla until a shaggy dough forms.
Flour your counter and dump the dough out. Lightly flour the dough and knead it for 5 minutes. Spray the same bowl with nonstick spray and shape the dough into a ball. Place it in the bowl and cover with a kitchen towel. Let rise for 1 hour until doubled. -
Make the Streusel: While the dough rises, prepare the streusel. Blend all streusel ingredients together in a food processor (or use your hands/pastry blender) until crumbly and clumping. Set aside.

Make the Filling: While the dough rises, make the pear filling. Rinse and slice your pears into 1/4 to 1/2-inch thick slices. Add all filling ingredients to a medium or large nonstick skillet over medium heat. Cook the pears for 4 minutes, gently stirring with a silicone spatula until caramelized and softened. Turn off the heat and remove the pan from the burner.
Preheat your oven to 425 degrees F (220 degrees C). -
Assemble the Pizza: Once the dough has risen, press it into a well-greased 9-inch round pan, pushing it up the sides slightly. Spoon the cooked pears over the crust, leaving behind most of the excess liquid from the pan. Sprinkle all the streusel generously on top – it’s meant to be a thick layer!
