Ingredients

For the Chocolate Cake

  • 12 TBSP salted butter, softened
  • 1 and 1/2 cups brown sugar, packed
  • 1/4 cup + 2 TBSP cane or granulated sugar
  • 2 eggs
  • 2 egg yolks
  • 1 TBSP vanilla extract
  • 1 and 1/2 cups milk
  • 1/2 tsp baking soda
  • 1 and 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup cocoa powder
  • 2 cups all-purpose flour

For the Frosting

  • 8 TBSP butter, softened, 1 stick
  • 1 and 1/4 cup powdered sugar
  • 1 TBSP Eagle Brand Sweetened Condensed Milk
  • 1 TBSP milk
  • 1 tsp vanilla
  • 1/4 cup cocoa powder

Additional Ingredients + Tools:

  • 1 cup Eagle Brand Sweetened Condensed Milk
  • cake pop sticks, linked below
  • 40 ounces high-quality chocolate baking bars or melting wafers, See note below about NOT using chocolate chips
  • sprinkles, for decorating

Instructions

  • Prep: Thoroughly grease two 9-inch cake pans with shortening, then dust generously with flour, tapping the pan to ensure an even coating. Tap out any excess flour. Preheat your oven to 350 degrees F (175 C).
  • Make the Cake: In a large mixing bowl, cream the softened butter with an electric mixer until light and creamy, about 1-2 minutes. Add both brown and granulated sugars, continuing to cream until the mixture is well combined, fluffy, and pale in color, another minute or so. Beat in the eggs, egg yolks, and vanilla extract until just incorporated. Next, pour in the milk; the batter will become quite thin, which is perfectly normal for this recipe. Finally, add the dry ingredients (baking soda, baking powder, salt, cocoa powder, and all-purpose flour). Mix on low speed until just combined, being careful not to overmix. Scrape down the sides and bottom of the bowl to ensure no dry pockets remain. The batter will now thicken.
  • Bake: Divide the cake batter evenly between the two prepared pans. Bake for 25-32 minutes, or until a toothpick inserted into the center of a cake comes out with moist crumbs attached, not wet batter.   • Dip + Assemble the Cake Pops: Melt your chosen high-quality chocolate in the microwave in 20-second intervals, stirring thoroughly after each interval until completely smooth. Use a deep glass 1 or 2-cup measuring cup for easy dipping. Prepare your drying station: for round cake pops, poke small holes in an inverted cardboard box so the sticks can stand upright without the backs flattening. For footballs or hearts, they can lie flat on a parchment or wax paper-lined baking sheet or countertop to set. To prevent cracking, let about 1/4 of the chilled cake balls sit at room temperature for 5 minutes before dipping (rotate batches as you work). Ensure the melted chocolate is warm, not hot. Dip a cake pop stick about 1/4 inch into the chocolate, then insert it halfway into a cake ball. Dip the entire cake ball into the chocolate, ensuring the coating meets the chocolate on the stick for security. Gently tap or swirl the stick against the glass to remove excess chocolate. Add sprinkles immediately while the chocolate is still wet. Place in your prepared drying station to set. If desired, drizzle with extra chocolate once set.

    Football Decorations: Once the chocolate on your football cake pops is completely set, use a tube of white decorating/writing gel to pipe the laces. Draw a single line across the length of the football, then add three short intersecting lines.

    (Note: If some of your chocolate coatings crack slightly, don’t worry! While ideal to avoid, it’s a common occurrence and will not impact the delicious taste or overall outcome.)

  • Serve + Store: Serve the cake pops as soon as the chocolate coating has fully set. Store any leftovers in an airtight container in the refrigerator for up to 1 week. These cake pops also freeze beautifully in an airtight container for 1-2 months. Thaw them overnight in the fridge before serving.
  • Make Ahead Tips: The prepared cake balls (before dipping in chocolate) can be stored in an airtight container in the freezer for 1-2 months. When ready to use, simply thaw them overnight in the refrigerator. This allows you to portion out a few at a time or prepare a half or full batch for any future event, making entertaining much easier. Since this recipe yields a large number of cake pops, I often freeze half of the undipped balls for later enjoyment.

    Recipe Yield: If you desire a smaller batch, this recipe can also be successfully cut in half.

For the smoothest, most professional-looking finish on your cake pops, it is highly recommended to use a high-quality chocolate baking bar or dedicated melting wafers. Please do not use chocolate chips, as they contain stabilizers that prevent them from melting into a truly fluid consistency, which can result in a dull, uneven, or clumpy coating.
