Crafting the perfect peach cobbler doesn’t have to be complicated. Our recipe focuses on the core elements that elevate a simple fruit dessert into an unforgettable experience. Here’s what sets our peach cobbler apart:
- Peak Season Peaches: The foundation of any superb peach cobbler lies in using ripe, fresh, and exceptionally juicy peaches. Their natural sweetness and vibrant flavor truly shine through.
- No Peeling Required: Forget the tedious task of peeling peaches! Our recipe embraces simplicity, allowing you to save time and effort without compromising on taste or texture. The skins soften beautifully during baking.
- Perfectly Sweetened: We strike the ideal balance of sweetness, ensuring the cobbler is never overly sugary. The natural flavor of the peaches remains the star, complemented by just the right amount of cane or granulated sugar.
- Warm Spice Notes: A delicate hint of cinnamon and nutmeg adds incredible depth and warmth, enhancing the peaches without overpowering them. These aromatic spices are crucial for that quintessential cobbler flavor.
- The Ultimate Topping: Our unique crust offers the best of both worlds – a tender, cake-like interior combined with a delightfully crunchy exterior. It’s the textural contrast that makes every bite exciting.
- Effortless Preparation: This recipe is designed for ease. From minimal cleanup to straightforward steps, it’s perfect for both novice bakers and seasoned pros looking for a quick yet impressive dessert.
- Versatile for Dietary Needs: Easily adaptable to be vegan or non-vegan. Simply choose between coconut oil for a plant-based version or classic butter for a traditional twist. Both options yield a spectacular result.

Simple Steps, Incredible Flavor: One Bowl, One Pan!
Yes, you read that right – this delightful recipe only requires one bowl for the topping and one pan for baking, making cleanup an absolute breeze. That’s a win in any kitchen! The process couldn’t be more straightforward: begin by tossing your perfectly sliced peaches with sugar and warming spices directly in your baking dish. Next, quickly mix the topping ingredients in a single bowl until a lovely dough forms. Then, simply flatten small chunks of this delicious topping over the peach mixture. Pop it in the oven, and soon you’ll be treated to an aromatic, bubbling dessert. Don’t forget that essential scoop (or two!) of vanilla ice cream on top before you dig in!
Could creating such a phenomenal dessert be any easier? We think not! The beauty of this recipe lies in its simplicity, proving that incredible flavor doesn’t need complicated steps or an endless pile of dishes.
Vegan or Classic: Your Choice, Always Delicious
One of the most remarkable aspects of this peach cobbler is its flexibility. We rigorously tested this recipe using both traditional butter and virgin coconut oil, and we’re thrilled to report that both yielded equally fantastic results. So, whether you’re aiming for a completely plant-based dessert or prefer the rich taste of butter, the choice is entirely yours. Our vegan version, made with coconut oil, is so good that even the most discerning palates won’t miss the dairy. It’s a versatile recipe that ensures everyone can enjoy a slice of this summery goodness.

Inspired by Family and Campfire Memories
A special shout-out goes to my mom for inspiring this incredible recipe! Just a couple of weeks ago, we were camping, and she whipped up the most amazing peach cobbler in her Dutch oven right over the campfire. The smoky essence and rustic charm of that experience were simply unforgettable and sparked the creation of this equally delicious, yet simpler, indoor version. It just goes to show that great food and cherished memories often go hand-in-hand.
We encourage you to enjoy this fantastic vegan (or non-vegan) peach cobbler throughout peach season. While fresh peaches are abundant, I’ll certainly be making this every week, and I heartily advise you do the same! It’s too good to pass up.

Tips for the Perfect Peach Cobbler
Choosing the Best Peaches
- Fresh is Best: While canned or frozen peaches can work in a pinch, fresh, ripe peaches truly make this cobbler shine. Look for peaches that are fragrant, slightly soft to the touch, and free of blemishes.
- Don’t Fear the Skin: As mentioned, peeling isn’t necessary! The skins soften beautifully when baked and add a lovely rustic texture and nutritional value. If you prefer a smoother texture, you can blanch and peel them, but it’s completely optional for this recipe.
- Adjust Sweetness: The amount of sugar needed can vary based on the sweetness of your peaches. If your peaches are very sweet, you might reduce the sugar slightly. If they’re a bit tart, add a tablespoon or two more to the filling.
Crafting the Ideal Topping
- Cold vs. Melted Fat: For this specific cobbler, melted coconut oil or butter is used for a more cakey, yet still crunchy, topping. This differs from traditional biscuits where cold fat is cut in. Ensure your chosen fat is fully melted for best results.
- Don’t Overmix: Mix the topping ingredients just until combined. Overmixing flour can develop gluten, leading to a tougher crust. A light hand will ensure that tender-cakey texture.
- Even Distribution: When flattening small chunks of dough over the peaches, try to distribute them as evenly as possible. This ensures a consistent crust texture across the entire cobbler.
Baking to Perfection
- Watch the Broiler: The final broiling step is crucial for achieving that delightful crunchy topping. Keep a very close eye on it, as broilers can quickly burn things. One to two minutes is usually enough.
- Know When It’s Done: The cobbler is ready when the peaches are bubbling around the edges and the topping is golden brown and cooked through. A toothpick inserted into the topping should come out mostly clean.
Serving and Storage Suggestions
- Serve Warm: Peach cobbler is undeniably best served warm, ideally straight from the oven after it’s had a few minutes to cool slightly. This allows the juices to settle and the flavors to meld beautifully.
- The Classic Pairing: A generous scoop of vanilla ice cream melting over the warm cobbler is a match made in heaven. The cold creaminess provides a wonderful contrast to the warm, spiced fruit.
- Other Topping Ideas: For a lighter option, a dollop of whipped cream (dairy or coconut-based) works wonders. A sprinkle of toasted pecans or almonds can add extra crunch and nutty flavor.
- Storage: Store any leftover cobbler, covered tightly with plastic wrap or foil, in the refrigerator for up to 4 days.
- Reheating: To reheat, simply warm individual servings in the microwave or place the entire dish back in a 300°F (150°C) oven until heated through.
Frequently Asked Questions About Peach Cobbler
Can I use frozen peaches for this recipe?
Yes, you absolutely can! If using frozen peaches, there’s no need to thaw them first. Simply toss them with the sugar and spices as directed. You might need to add an extra 5-10 minutes to the baking time to ensure they are tender and bubbling. Be aware that frozen peaches can release more liquid, so your filling might be slightly saucier, but still delicious.
What about canned peaches?
While fresh peaches are highly recommended for the best flavor and texture, canned peaches can be used in a pinch. If using canned peaches, be sure to drain them very well to avoid an overly watery filling. You might also want to reduce the amount of added sugar for the filling, as canned peaches are often packed in syrup.
Can I make this cobbler ahead of time?
You can prepare the peach filling and the topping separately and store them in the refrigerator for up to a day before baking. Assemble and bake just before serving for the freshest taste and best texture. Baked cobbler leftovers are still great, but the topping will be crispiest on the day it’s baked.
Is this recipe naturally gluten-free?
No, this recipe is not naturally gluten-free as it uses white whole wheat flour and all-purpose flour. However, you could experiment with a 1:1 gluten-free all-purpose flour blend. Results may vary slightly in texture, but many gluten-free blends work well in cobblers.
What kind of baking dish should I use?
A standard 9×13 inch baking dish works perfectly for this recipe. You can use glass, ceramic, or metal. If using a Dutch oven as mentioned in the inspiration, adjust baking times as cast iron retains heat differently. For a smaller batch, a 9×9 inch pan would work, but you’d need to halve the recipe.
Why is my cobbler topping not crunchy?
The key to a crunchy topping is the final broiling step. Ensure your oven’s broiler is fully preheated and watch it carefully. If it’s not crunching up, it might need another minute or so under the broiler, but be very vigilant to prevent burning.
The Recipe: Easy Vegan Peach Cobbler

Easy Vegan Peach Cobbler
By Stephanie Simmons
Loaded with fresh, juicy peaches & topped with a crust that’s a mix between cakey and crunchy. It can easily be made vegan by swapping coconut oil for butter! It’s incredibly delicious both ways!
Cook: 37 mins
Total: 47 mins
Servings: 6 servings
Ingredients
For the peach filling
- 6 fresh peaches, large
- 1/3 cup cane or granulated sugar
- 1/4 tsp nutmeg
- 1/2 tsp cinnamon
For the topping
- 1/2 cup melted coconut oil, Or 1/2 cup melted salted butter
- 2/3 cup cane or granulated sugar
- 2 tsp vanilla
- 1/2 cup white whole wheat flour
- 1/2 cup all-purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- raw sugar, for topping
Instructions
-
Prep: Preheat oven to 350 degrees F (175 degrees C). If making a vegan cobbler, spray a 9×13 baking dish with nonstick spray. If NOT making it vegan, rub some butter onto the bottom and sides of the pan, and add a few small chunks to the bottom of the pan. Set aside.
-
Make the filling: Slice the peaches thinly. Peel them if desired, but it’s not necessary. Toss the peaches in the prepared baking dish to evenly coat with the sugar, nutmeg, and cinnamon. Then, spread peaches into an even, flat layer in the pan.
-
Make the topping: In a bowl, mix together the melted coconut oil or butter, sugar, vanilla, flours, baking powder, and salt. Stir together until a dough forms and all ingredients are well mixed. Flatten small chunks of the dough and lay them on top of the peaches, covering most of the fruit layer.
-
Bake: Bake for 23-25 minutes. After this initial bake, add a few tablespoons of raw sugar on top of the cobbler for extra sparkle and crunch, and return to the oven for 8 more minutes. Then, broil for 1-2 minutes to get a nice crunchy texture on the top of the cobbler. Watch it carefully so it doesn’t burn!
-
Serve + Store: Serve warm, ideally with a scoop of vanilla ice cream. Store leftovers, covered, in the fridge for up to 4 days.
