Here at our place, pulled pork isn’t just a meal; it’s a culinary cornerstone, a comforting classic that consistently brings smiles to the table. Naturally, the combination of tender, succulent BBQ pulled pork is an undisputed triumph in our home.
It’s a rather amusing memory: my appreciation for barbecue sauce didn’t truly blossom until Grant, with his infectious enthusiasm, introduced me to its wonders when we first started dating. Instant Pot vs. Slow Cooker: Your Path to Perfect Pulled Pork
Fear not if you haven’t yet joined the Instant Pot revolution! This incredible pulled pork recipe is just as delicious and manageable in a traditional slow cooker, ensuring everyone can enjoy its tender, flavorful goodness. The directions for both methods are straightforward and designed to deliver consistently amazing results.
The Speed and Efficiency of the Instant Pot
The Instant Pot method is a dream for those who crave speed without compromising on flavor or tenderness. Its pressure cooking capability transforms a tough cut like pork butt into fall-apart perfection in a fraction of the time compared to conventional methods. The intense pressure helps break down the connective tissues quickly, resulting in succulent shredded pork that’s ready to absorb all the delicious spice rub and barbecue sauce.
The Classic Comfort of the Slow Cooker
For purists or those who prefer the traditional “low and slow” approach, the crock pot method offers an equally delightful experience. While it requires more time, the hands-off nature remains, allowing you to leave the pork to gently simmer throughout the day, filling your home with an irresistible aroma. The extended cooking time ensures maximum tenderness and deeper flavor infusion, making it an excellent choice for meal prep or busy workdays when you want dinner waiting for you.

The Ultimate Pulled Pork Recipe: Instant Pot & Slow Cooker Methods
Yield: 4-5 servings
Ingredients:
- 2 lb pork butt (also known as Boston butt), thawed – This cut is ideal for pulled pork due to its marbling, which yields incredibly tender, juicy results when slow-cooked or pressure-cooked.
- 2 TBS molasses* – Molasses adds a deep, rich sweetness and a beautiful dark hue to the pork, enhancing the BBQ flavor profile.
- 2 1/2 tsp garlic powder – A foundational flavor that complements pork beautifully.
- 3/4 tsp thyme – Adds an earthy, slightly minty note that pairs wonderfully with the savory pork.
- 1 1/2 tsp salt – Essential for seasoning and bringing out the natural flavors of the meat.
- Pinch of pepper – A touch of warmth and subtle spice.
- 1/2 tsp cinnamon – This might seem unexpected, but cinnamon adds a subtle warmth and complexity that elevates the spice rub, creating a truly unique flavor.
- 2 cups of water – Provides the necessary liquid for pressure cooking or slow simmering, ensuring moisture and preventing scorching.
- 1 – 2 cups of your favorite barbecue sauce – The star ingredient for that classic BBQ taste. Choose one you absolutely love!
Instant Pot Instructions:
- Prepare the Pork: Place your thawed pork butt on a plate or in a shallow dish, ready for seasoning.
- Craft the Rub: In a small bowl, combine all ingredients except the barbecue sauce and water (molasses, garlic powder, thyme, salt, pepper, and cinnamon). Mix them thoroughly until well combined.
- Season Generously: Rub the spice mixture evenly and generously over all surfaces of the pork. Don’t be shy – this is where the primary flavor layer is built!
- Set Up the Instant Pot: Place the seasoned pork into your Instant Pot. While I typically use the trivet that comes with the Instant Pot to keep the pork slightly elevated, it’s not strictly necessary for this recipe, as the pork will partially sit in the liquid regardless.
- Add Liquid: Carefully pour the 2 cups of water into the bottom of the Instant Pot, ensuring you don’t pour it directly over the pork. This prevents washing off your meticulously applied seasoning rub.
- Cook Under Pressure: Secure the lid on your Instant Pot, making sure the sealing valve is set to ‘Sealing’. Select the ‘Manual’ or ‘Pressure Cook’ setting and cook on high pressure for 40 minutes.
- Natural Pressure Release: Once the cooking cycle is complete, allow the pressure to release naturally. This is crucial for tenderizing the meat and preventing it from becoming tough. Wait until the float valve (pin) has dropped completely before attempting to open the lid.
- Shred the Pork: Carefully remove the lid and transfer the cooked pork to a sturdy cutting board. Using two forks, easily shred the pork apart. It should be incredibly tender and practically fall apart on its own.
- Finish and Serve: Transfer the shredded pork to a large serving bowl. Pour in 1 to 2 cups of your favorite barbecue sauce, adjusting the amount to your taste. Toss everything together until the pork is thoroughly coated. Serve immediately plain, with crunchy chips, nestled in a fresh salad, or our personal favorite – taco style, surrounded by all your favorite fixings!
Crock Pot (Slow Cooker) Instructions:
- Prepare & Season: Follow steps 1-3 from the Instant Pot instructions to prepare and season your pork butt.
- Place in Slow Cooker: Place the seasoned pork butt directly into your slow cooker.
- Add Water: Carefully pour the 2 cups of water into the bottom of the slow cooker, again avoiding pouring directly over the seasoned pork.
- Slow Cook to Perfection: Cover and cook on the LOW setting for 7-8 hours, or until the pork is incredibly tender and easily shredded with a fork.
- Alternative (Use with Caution): If you are severely crunched for time, you can try cooking it on HIGH for 4-5 hours. However, based on experience, cooking on high in the slow cooker can sometimes result in pork that is a bit tougher than desired. For truly fall-apart tender results, the low and slow method is highly recommended.
- Shred & Serve: Once cooked, transfer the pork to a cutting board and shred with two forks. Return the shredded pork to the slow cooker (or a serving bowl), add your favorite barbecue sauce, and mix well. Serve as desired!
*Note on Molasses: If you don’t have molasses on hand, an excellent substitute is brown sugar. Use 2 tablespoons of packed brown sugar in its place for a similar sweetness and depth. Additionally, please remember that if you are using a larger piece of pork than the recommended 2 lbs, your cooking time will need to be proportionally longer to ensure it reaches optimal tenderness, regardless of the cooking method.
