Healthier Tater Tot Hot Dish

This is one of the easiest dinners I know how to make – and it’s perfect for fall! It’s cozy, flavorful, and makes great leftovers. This version of Tater Tot Hot Dish is made healthier by adding extra veggies and taking out the canned soup – but it’s still just as creamy and delicious as the original!

Ingredients

For the Meat:

  • 1 lb ground turkey, or ground beef
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 3/4 tsp garlic powder

For the Hot Dish:

  • 1-2 tbsp olive oil
  • 2 large bell peppers, diced
  • 1/2 one large yellow onion, finely diced
  • 3 large cloves garlic, minced
  • 1/2 tsp salt
  • 2 tsp chili powder
  • 2 tsp cumin
  • 2 tsp paprika
  • pinch of pepper
  • 12 to 16 ounces cheese, grated, I used a mix of monterrey jack and cheddar
  • 1/4 cup all-purpose flour
  • 3/4 cup milk
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 bag frozen tater tots

Instructions

  • Prep: Preheat oven to 350℉ (175°C). Chop your onion and bell pepper.
  • Cook the Meat: Add the ground turkey (or beef) to a 12-inch cast iron pan (or another 12-inch oven safe skillet). Add the turkey seasonings (1/2 tsp salt, 1/4 tsp pepper, 3/4 tsp garlic powder). Cook over medium heat, stirring to break up the meat, until the meat is completely cooked through. Add the meat to a large paper-towellined bowl or plate (to soak up any grease) while you make the filling.
  • Make the Hot Dish Filling: In the same pan, heat 1-2 tbsp of olive oil over medium heat. Sauté the onion and bell peppers until crisp-tender (they’ll cook more in the oven). Add the minced garlic and sauté for 30-60 seconds, to cook out the raw garlic taste.

    Add the cooked meat back into the pan with the veggies, and add the spices (1/2 tsp salt, 2 tsp chili powder, 2 tsp cumin, 2 tsp paprika, pinch of pepper), stirring to combine everything. Add the 1/4 cup all-purpose flour, and give it a good stir so it coats everything, cooking for about 1 minute.

    Next, slowly pour in the 3/4 cup milk while whisking the mixture in the pan to keep everything nice and smooth. Next, slowly add the grated cheese (12-16 oz, a mix of Monterey Jack and cheddar recommended), a handful or so at a time, whisking while you add each handful. Go slow here, so the cheese doesn’t clump up. Stir in the drained black beans and corn.

    Taste and add extra seasoning if desired.

  • Bake: Top the mixture in the skillet with the entire bag of frozen tater tots. If your skillet is super full when you put it in the oven, add a sheet pan underneath to catch any drips.

    Bake for 25-30 minutes – the tots will have browned slightly and the filling will be bubbling underneath.

  • Serve + Store: Top with extra diced peppers, cilantro, etc. after baking, if desired. Enjoy immediately! Store leftovers, tightly covered, in the fridge for up to 5 days.
