The Anatomy of a Perfect S’mores Tart
Every layer of this S’mores Tart is designed for maximum flavor and texture, creating a harmonious blend that truly encapsulates the s’mores experience. Let’s dive into what makes each component so special.
1. The Irresistible Graham Cracker Cookie Base
Forget crumbly, dry crusts. Our S’mores Tart starts with a unique and utterly delicious soft cookie base, generously infused with graham cracker crumbs. This isn’t just a crust; it’s a delightful hybrid—a soft cookie that meets a perfectly formed crust, offering a tender chew with every bite. The incorporation of graham cracker crumbs throughout the dough ensures that unmistakable, slightly honeyed flavor of the classic s’mores cracker is present in every mouthful. This base bakes to a beautiful golden brown, providing a sturdy yet yielding foundation that complements the rich layers above. It’s a game-changer, elevating the entire tart from good to absolutely glorious.

2. A Luscious Melt-in-Your-Mouth Milk Chocolate Layer
What’s a s’more without its melting chocolate? Our tart features a generous layer of milk chocolate that transforms into a silky, warm pool of goodness as the base bakes. We highly recommend using a high-quality milk chocolate for the best flavor, whether it’s a premium baking bar, classic Hershey’s bars (for that authentic s’mores nostalgia), or even good quality chocolate chips. The beauty of this layer is its simplicity: you simply arrange the chocolate over the unbaked crust, and as it bakes, it melts into a smooth, irresistible filling. The quick 9-minute bake time for the base ensures the chocolate is perfectly gooey and ready to be spread evenly, creating that signature, sweet chocolatey heart of the tart.

Once the tart base emerges from the oven, take a moment to savor the aroma. Then, with a spoon, gently spread that beautifully melted chocolate evenly across the crust. It’s a simple step, but watching the chocolate melt and smooth out is truly a satisfying moment before moving on to the grand finale!

3. Cloud-Like Toasted Marshmallow Meringue
The crowning glory of this S’mores Tart is undoubtedly the homemade marshmallow meringue. While “meringue” might sound intimidating, I promise you, this recipe makes it incredibly simple and foolproof. This isn’t just any meringue; it’s light, airy, subtly sweet, and toasts beautifully, capturing that quintessential charred marshmallow flavor without the campfire smoke. It adds a sophisticated touch and a delightful textural contrast to the rich chocolate and cookie base.
How to Make This S’mores Tart: A Step-by-Step Guide
If you can whip up a batch of cookie dough, you possess all the skills needed to create this spectacular tart. Let’s walk through the process together, making it as easy as possible.
Step 1: Preparing the Cookie Crust
Our journey begins with that glorious, soft cookie-meets-crust-meets-graham-cracker foundation. First, preheat your oven to 350°F (175°C). Lightly grease your tart pan (or chosen baking dish) to prevent sticking. In a medium mixing bowl, combine vegetable oil, a large egg, vanilla extract, and both brown and granulated sugars. Beat these together until well combined and creamy. Next, gradually add the all-purpose flour, whole wheat flour, baking powder, and salt, mixing until a soft dough forms. Finally, fold in the crushed graham cracker crumbs, ensuring they are evenly distributed. This dough is wonderfully pliable and easy to work with. Press it firmly and evenly into your prepared tart pan, creating a smooth, consistent layer for the base.
Step 2: Adding and Baking the Chocolate Layer
Once your crust is perfectly pressed into the pan, it’s time for the chocolate. Break up your chosen milk chocolate (whether it’s a baking bar or classic candy bars) and arrange the pieces evenly across the surface of the dough. The magic here is that the chocolate melts as the base bakes, infusing every bite with rich flavor. Pop the tart into your preheated oven and bake for a mere 8-9 minutes. The baking time is purposefully short to ensure the crust is perfectly tender and the chocolate is beautifully melted. Upon removing the tart from the oven, use the back of a spoon to gently spread the melted chocolate, creating a smooth, glossy, and complete layer over the crust. Now, resist the urge to dive in immediately! Allow the tart to cool completely before proceeding to the final meringue topping. This cooling step is crucial for the tart’s structural integrity and overall enjoyment.
Step 3: Crafting the Homemade Marshmallow Meringue
Now for the grand finale: the irresistible marshmallow meringue. This step is surprisingly straightforward, and the results are truly worth it. You’ll need a heat-safe bowl and a small to medium saucepan. Add about an inch of water to your saucepan and bring it to a gentle simmer over medium heat, creating steam. Crucially, ensure that your heat-safe bowl, when placed on top of the saucepan, does not touch the simmering water. This creates a double-boiler effect, gently cooking the egg whites without scrambling them.
In your heat-safe bowl, combine the egg whites, granulated sugar, and cream of tartar. The cream of tartar is a non-negotiable ingredient here; it stabilizes the egg whites and helps them achieve that perfect marshmallow-like consistency. Place the bowl over the steaming water and whisk constantly for 3-4 minutes. Continue whisking until the sugar has fully dissolved and the mixture feels warm and smooth to the touch – you shouldn’t feel any sugar granules when you rub a small amount between your fingers. Alternatively, use a candy thermometer to ensure the mixture reaches 170°F (77°C) without touching the bottom of the bowl. Immediately remove the bowl from the heat and stir in the vanilla extract.

Now, using an electric mixer, beat the warm egg white mixture on high speed for 4-6 minutes. Continue beating until the meringue forms stiff, glossy peaks when you lift the mixer beaters from the bowl. The meringue should be thick, voluminous, and hold its shape beautifully. (Refer to the image above for a visual cue of stiff peaks.)

Step 4: Assembling and Toasting the Tart
Carefully spoon or pipe the freshly made marshmallow meringue over your cooled, chocolate-covered tart. You can create beautiful swirls and peaks for a rustic look, or spread it evenly for a more classic finish. The final touch that brings the “s’mores” experience to life is the toasting. Grab your kitchen torch and gently toast the peaks of the meringue until they’re beautifully golden brown and lightly charred in spots, just like a marshmallow fresh from the campfire. If you don’t have a kitchen torch, don’t worry – your oven’s broiler can do the trick! Pop the tart under the broiler for 1-2 minutes, but be sure to watch it like a hawk, as meringue can burn very quickly. Once toasted, your magnificent S’mores Tart is ready to be admired, sliced, and devoured!

Essential Tips for S’mores Tart Success
Having made this tart approximately 586 times (give or take a few!), I’ve gathered some invaluable insights to help you achieve perfection every single time.
Blow Torch Recommendation: Invest Wisely!
For that perfect, evenly toasted meringue, a kitchen torch is your best friend. While small, handheld kitchen torches are available on Amazon, I strongly recommend opting for a more robust model from your local hardware store. These often consist of a larger butane tank with a small attachment that screws on, offering a more consistent flame and longer lifespan. I’ve found them to work significantly better than their flimsier counterparts, which tend to die out quickly. A good hardware store torch typically costs around $20-$30, making it an affordable investment for any aspiring home baker. Of course, you can always use your oven’s broiler for 1-2 minutes to toast the topping, but be sure to maintain a vigilant watch to prevent burning. Personally, I find the flavor and texture achieved with a torch to be superior, offering a more controlled and authentic toasted marshmallow taste.
Meringue Alternatives: When Time is Tight
While I wholeheartedly encourage you to try the homemade marshmallow meringue – I promise it’s easier than it sounds! – I understand that sometimes convenience is key. If you’re short on time or prefer a shortcut, you can absolutely “cheat” the marshmallow layer. Consider using store-bought marshmallow cream (like Fluff), spreading it evenly over the tart. Alternatively, you can arrange whole marshmallows (cut in half for easier handling) or mini marshmallows across the chocolate layer. Regardless of which alternative you choose, I still highly recommend giving it a quick blast under the broiler or with a kitchen torch to achieve that delicious, slightly caramelized toasted flavor that makes s’mores so special.
Tart Pan Alternatives: Adapt and Conquer!
I typically use a fluted tart pan with a removable bottom (affiliate link) for that classic elegant look and easy serving. However, if you don’t own one, don’t let that stop you! This recipe is incredibly versatile. You can easily bake this in an 8×8-inch square pan for a more rustic bar-like dessert. For those with a 9-inch round tart pan, it should also work beautifully. While I haven’t personally tested the 9-inch round pan yet, you might consider increasing the crust ingredients by about 1.5 times to ensure adequate coverage for the larger surface area and sides. A quick test would be to press half the dough in and see if it adequately covers the pan – if not, double up! I’ll be sure to test this myself on my next bake and update the recipe accordingly. The important thing is to use whatever baking dish you have on hand and enjoy the process!

Make Ahead and Storage Tips
To make your life easier, you can prepare the tart base and chocolate layer 1-2 days in advance. Once baked and cooled, cover it tightly and store it at room temperature. The meringue, however, is best made just before serving to ensure it’s at its freshest and fluffiest. Leftovers, if there are any (a rare occurrence, trust me!), can be stored tightly covered in the refrigerator for up to 3 days. While it’s truly best enjoyed the day it’s made, the flavors still hold up well, offering a delightful treat for days to come.
The Perfect Dessert for Any Summer Occasion
Is your mouth watering yet? Mine certainly is! Okay, maybe a lot. If you have any summer plans involving a potluck, cookout, picnic, or even just a cozy evening at home, you absolutely must make this S’mores Tart. It’s incredibly easy to put together, looks absolutely stunning on any dessert table, and is, quite frankly, INSANELY delicious. I cannot emphasize enough how truly good this tart is. I could honestly eat an entire one all by myself!
I remember the first time I made this and suggested to my husband that he take some to work to share – he immediately refused. “It’s too good to share,” he declared, those were his exact words, not mine! And honestly, I can’t blame him.

Thank goodness for the simple pleasure of chocolate bars and the magic of marshmallow meringue, all coming together in this incredible S’mores Tart! Happy baking, friends, and enjoy every single delightful bite.

Ingredients
For the Cookie Crust:
- 1/4 cup vegetable oil
- 1 large egg
- 1/4 cup brown sugar, packed
- 1/4 cup granulated sugar
- 1/2 cup + 3 TBSP all-purpose flour
- 1/4 cup whole wheat flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/4 cup + 2 tbsp crushed graham crackers
- 10 ounces milk chocolate, This can be a baking bar, Hershey’s bar, or chocolate chips. Use whatever you like best!
Marshmallow Meringue
- 3 egg whites
- 3/4 cup granulated sugar
- 1/4 plus 1/8 tsp cream of tartar, Do NOT skip this ingredient! It’s crucial for stabilization.
- 1/2 tsp vanilla extract
Instructions
- Prep: Preheat oven to 350 degrees F (175 C). Crush graham crackers and set aside. Spray a tart pan (see notes for alternatives) well with non-stick spray.
- Make the Crust: Mix oil, egg, vanilla, and sugars in a medium bowl with an electric mixer until combined. Add the flours, baking powder, and salt and mix until a dough forms. Mix in the graham cracker crumbs last.
- Bake: Press the dough evenly into the prepared pan. Evenly distribute your chosen milk chocolate across the top of the dough layer. Bake for 8-9 minutes, or until the crust is lightly golden and the chocolate is melted. Use a spoon to gently spread the melted chocolate out so it fills the crust smoothly. Let the tart cool completely before adding the meringue topping. This is a crucial step for the tart’s structure.
- Make the Marshmallow Meringue: Add about an inch of water to a small/medium saucepan and bring to a gentle simmer, creating steam. Grab a heat-safe bowl and ensure it rests on the pot without touching the water. In your selected bowl, add egg whites, sugar, and cream of tartar (crucial for getting the right texture). Set the bowl over the steaming pot of water. Cook, whisking constantly until the sugar is dissolved and egg whites are warm and smooth to the touch (you shouldn’t be able to feel granules of sugar). This typically takes about 3-4 minutes, or until a candy thermometer reaches 170°F (77°C) without touching the bottom of the bowl. Remove from the heat immediately, and add the vanilla extract. Mix with an electric mixer on high speed for 4-6 minutes until stiff, glossy peaks form when you lift the mixer up from the meringue. (See photo above for visual guide.)Toast the Meringue: Spread the meringue over the cooled tart. Using a kitchen torch, toast the marshmallow meringue until golden brown and lightly charred in spots. You can also place the tart under the broiler in your oven for 1-2 minutes – keep a close eye on it so it doesn’t burn, as meringue can toast very quickly.
- Serve + Store: Serve immediately once the meringue has been toasted for the best experience. This tart is best enjoyed the day it’s made, but you can keep leftovers tightly covered in the fridge for about 3 days. You can bake the tart base with the chocolate 1-2 days ahead, and keep it well-covered at room temperature until the day you want to serve it. Make the meringue just before serving to ensure ultimate freshness and fluffiness.
Notes
NOTE: I used a 14 x 4.5 inch Wilton tart pan for this recipe, which yields two tarts. If you don’t have a tart pan, any baking dish will work! For example, you could still get two tarts by splitting the crust dough in half and using two 8×8 inch square pans. Lining the pans with parchment paper will make for incredibly easy removal of the tart when you’re ready to slice and serve it.
NOTE: For the chocolate bar, I highly recommend Trader Joe’s Pound Plus Milk Chocolate bar – it’s truly one of the best milk chocolates available! However, any milk chocolate bar you enjoy will work perfectly fine in this recipe.
