Ingredients

  • 1/2 cup pecans, chopped (plus more for topping)
  • 1 cup salted butter, 226 grams
  • 1/4 cup water
  • 1 cup granulated sugar, 210 grams
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt
  • 1 cup semi-sweet chocolate chips or a chopped baking bar, 175 grams (see note below)
  • Flaky sea salt, optional

Instructions

  1. 1. Prep Your Workspace: Line a 9×9 inch square pan with parchment paper (for thick toffee) or a large cookie sheet with parchment paper (for thinner pieces). Gather and measure all ingredients.
  2. 2. Toast Pecans (Optional): In a small saucepan, toast chopped pecans over low-medium heat for 3-5 minutes, stirring frequently until fragrant. Set aside to cool.
  3. 3. Make the Toffee Base: In a medium, heavy-bottomed saucepan, combine butter, water, and granulated sugar. Cook over medium-high heat, stirring constantly, until boiling and sugar dissolves. Reduce heat to medium. Cook for 11-14 minutes, stirring frequently, until the mixture reaches 300°F (149°C) on an instant-read thermometer (hard crack stage).

    Immediately remove from heat and stir in vanilla extract and salt. Pour the hot mixture into or onto your prepared pan, spreading evenly.

  4. 4. Add Chocolate & Nuts: Immediately sprinkle chocolate chips over the warm toffee. Let sit for a few minutes to melt. Then, use an offset spatula to spread chocolate evenly. Sprinkle chopped, toasted pecans and optional flaky sea salt over the chocolate, gently pressing to adhere.
  5. 5. Cool & Set: Let the toffee cool completely at room temperature for at least 1 hour, or until the chocolate is fully set and firm.
  6. 6. Serve & Store: Once fully set, break the toffee into pieces or cut with a sharp knife. Store in an airtight container at room temperature for 1-2 weeks, or in the fridge for 3-4 weeks.

Notes

Chocolate: For a professional, shiny finish and to prevent chocolate bloom (a harmless but aesthetically unpleasing grayish-white film that can appear after a few days), consider tempering your chocolate before spreading it. You can learn how to temper chocolate here.
