For the Peach Cobbler Topping:

  • 4 large ripe peaches, diced (about 4 cups / 700 g)
  • 1/4 cup granulated sugar (53 g)
  • 1/4 cup + 1 tbsp light brown sugar, packed (69 g)
  • 3/4 tsp cinnamon
  • 1/4 tsp nutmeg
  • 2 tsp cornstarch
  • 2 tsp water
  • 1/2 tsp vanilla extract

For the Streusel:

  • 3/4 cup salted butter, melted (170 g)
  • 1 1/2 cups all-purpose flour (195 g)
  • 1/4 cup granulated sugar (54 g)
  • 1/4 cup light or dark brown sugar, packed (56 g)
  • 1 1/2 tsp cinnamon

For the Muffin Batter:

  • 1/2 cup salted butter, melted (113 g)
  • 1/3 cup + 1 tbsp vegetable oil (87 g)
  • 2 tsp lemon zest

  • 3 large eggs, room temperature
  • 1/2 cup sour cream, room temperature (120 g)
  • 2 tsp vanilla extract
  • 2 2/3 cups all-purpose flour (347 g) — reserve 2 tbsp for tossing peaches
  • 1 tbsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp cinnamon
  • 2/3 cup + 1 tbsp milk, room temperature (174 mL)
  • 2 1/2 cups diced peaches, fresh or frozen (do not thaw if using frozen; ~420 g)

For the Glaze:

  • 1 1/4 cups powdered sugar (144 g)
  • 2 tsp vanilla extract
  • Pinch of cinnamon
  • 1–2 tbsp water, to reach desired consistency

Instructions

  • Make the Peach Cobbler Topping: Combine peaches, both sugars, lemon juice, cinnamon, and nutmeg in a medium saucepan over medium heat. Cook about 6 minutes until bubbly. Mix cornstarch with water, stir into the peaches, cook 1 minute more, then remove from heat and stir in vanilla. Cool completely in the refrigerator. This can be made up to 2 days ahead and stored chilled.
  • Make the Streusel: Stir melted butter into the flour, sugars, cinnamon, and salt. If baking later, chill the streusel; if baking within an hour, freeze briefly to firm it up.
  • Prep: Bring sour cream, milk, and eggs to room temperature (~30 minutes). Preheat oven to 425°F if baking right away; if refrigerating the batter overnight, preheat when ready to bake.
  • Make the Muffin Batter: Whisk melted butter with oil, sugars, and eggs. Add sour cream and vanilla. Measure flour and reserve 2 tablespoons for the peaches, then add dry ingredients and fold until halfway combined. Pour in milk and fold until just combined. Toss peaches with reserved flour and fold gently into the batter.
  • Rest the Batter: Optionally rest the batter at room temperature for 1 hour for taller muffins, or refrigerate up to 24 hours for make-ahead convenience. If refrigerated, bake the batter straight from the fridge.
  • Assemble Muffins: Line your muffin pan and fill each cup with about 85 g of batter. Spoon roughly 16 g of peach filling onto each muffin and finish with about 25 g of streusel per muffin. Keep any extra filling and streusel chilled between batches.
  • Bake: Bake at 425°F for 5 minutes, then reduce oven to 350°F and bake 10–12 minutes more. Muffins are done when the tops appear set and a toothpick comes out with moist crumbs. Remove from pan with a butter knife and cool on a rack until warm.
  • Glaze: Whisk powdered sugar with vanilla, cinnamon, and enough water to reach a drizzleable consistency. Drizzle over warm muffins.
