More Than Just a Recipe: A Celebration Baked with Love
These aren’t just any ordinary cinnamon rolls; these are truly special. These particular rolls were baked to celebrate a significant milestone: the completion of student teaching by my wonderful Grant! Each fluffy spiral is generously stuffed with love, excitement, and immense pride for his hard-earned accomplishment. Student teaching is no easy feat, demanding incredible dedication and resilience, but he persevered and triumphed! I couldn’t be prouder of him.
Grant isn’t one to boast about his achievements, and that’s perfectly fine because I’m more than happy to do it for him! He tackled student teaching with unwavering commitment, and now that chapter is proudly closed. Up next: Graduation! Celebrating big moments with delicious food, especially these indulgent homemade cinnamon rolls, is one of the best traditions. It transforms a simple recipe into a cherished memory.

Unveiling the Secret to Easy Cinnamon Rolls
Now, let’s dive into the main event: these beautiful, golden, puffy, cinnamony, buttery, and incredibly easy spirals of goodness. You might be thinking, “Cinnamon rolls? Easy? That sounds too good to be true!” But believe me, I was just as pleasantly surprised by how simple these turned out to be. The secret lies in a fantastic shortcut: using a quality hot roll mix.
For years, I’ve relied on this particular hot roll mix, and I highly recommend it. It’s widely available on Amazon and at most major grocery stores, making it incredibly convenient to get your hands on. Using a mix significantly cuts down on prep time without compromising on that delightful homemade taste and texture we all crave.
What Makes This Cinnamon Roll Recipe So Easy?
- Minimal Kneading: Unlike traditional yeast doughs that require extensive kneading, this recipe keeps it simple. Just a few minutes of light kneading are all you need to achieve a smooth, workable dough.
- Quick Rise Time: Who has hours to wait for dough to rise? This recipe boasts a total rise time of only 35 minutes, allowing you to enjoy fresh cinnamon rolls much sooner.
- Fewer Ingredients: With the convenience of a hot roll mix, you won’t need a lengthy list of pantry staples. Most ingredients are likely already in your kitchen.
- Foolproof Cutting Technique: One common pitfall when making cinnamon rolls is squishing them during cutting. To avoid this, use a simple string or unflavored dental floss. It creates perfectly round, intact spirals every time. If you’ve never tried this method, watch this super-helpful 1-minute video for a quick tutorial.

Tips for Achieving Cinnamon Roll Perfection
While this recipe is incredibly forgiving, a few pointers can ensure your fluffy cinnamon rolls turn out absolutely perfect:
- Don’t Overheat Water: When activating the yeast, ensure your water is warm (around 105-115°F / 40-46°C), not hot. Water that’s too hot can kill the yeast, preventing your rolls from rising properly.
- Softened Butter is Key: For both the dough and the filling, ensure your butter is properly softened but not melted. This allows it to incorporate smoothly into the dough and spread easily for the filling, ensuring every bite is moist and flavorful.
- Even Filling Distribution: When spreading the butter and sprinkling the cinnamon-sugar mixture, aim for an even layer. This ensures consistent flavor and gooeyness throughout each roll.
- Tight Rolling: Roll the dough tightly from the longer side to create beautiful, well-defined spirals. A tight roll helps the rolls hold their shape during baking and prevents gaps.
- The String Method for Cutting: Seriously, try the string method! It’s a game-changer for clean, perfectly shaped rolls. Simply slide a piece of string or unflavored dental floss underneath the rolled dough, cross the ends over the top, and pull firmly to slice through.
- Monitor Baking: Ovens can vary, so keep an eye on your rolls. They should be golden brown. If they’re browning too quickly on top, cover them loosely with foil to prevent burning while the centers finish baking.
- Timing the Frosting: Resist the urge to frost the rolls immediately after they come out of the oven. Wait a few minutes for them to cool slightly. If frosted too hot, the cream cheese frosting will become very runny. A warm roll with slightly melted frosting is delightful, but completely runny frosting can be disappointing.

Ingredients
FOR THE ROLLS:
- 1 box of Pillsbury Hot Roll mix (see note below)
- 3 TBS granulated sugar
- 1 cup hot water
- 2 TBS butter
- 1 egg
FOR THE FILLING:
- 6 TBS butter
- 1 TBS flour
- 1/2 cup brown sugar
- 1 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- Pinch of ground cloves
- Pinch of salt
- 2 TBS milk
FOR THE FROSTING:
- 4 ounces cream cheese
- 4 TBS butter
- About 1 cup powdered sugar
- 1 1/2 tsp vanilla
Instructions
- Grease a 9 or 10 inch cast iron skillet or cake pan and preheat oven to 375 degrees F (190 C). Set pan aside.
- Combine the flour mixture packet and the yeast packet (both found in the hot roll mix box) with the granulated sugar in a mixing bowl. Add the warm water, butter, and egg. Stir until the dough comes together and all ingredients are well mixed.
- Lightly flour your countertop or preferred surface and knead the dough for a few minutes, or until it becomes smooth and elastic.
- Cover the dough with a clean kitchen towel and let it rest for 5 minutes. This brief rest helps the gluten relax, making the dough easier to roll.
- While the dough is resting, prepare the irresistible filling. In a separate bowl, combine the brown sugar, flour, cinnamon, nutmeg, ground cloves, and salt. Mix thoroughly until all ingredients are well combined. Set aside.
- After the dough has rested, roll it out into an approximately 11 x 16 inch rectangle. Don’t worry if it’s not perfectly exact.
- Microwave the 6 tablespoons of butter for the filling until it’s softened, but not fully melted. Spread this softened butter evenly over the entire surface of the rolled-out dough.
- Sprinkle the brown sugar and spice mixture evenly over the buttered dough, ensuring good coverage for maximum flavor.
- Starting with the longer side of the rectangle, begin to roll the dough slowly, keeping the roll as tight as possible throughout. Once you reach the opposite edge, pinch the dough to seal the seam firmly.
- Using a piece of unflavored dental floss or a thin string, cut the cinnamon roll log into about 7 even slices. This method helps maintain the beautiful spiral shape.
- Place each cut cinnamon roll into your prepared cast iron pan (or baking dish). Cover the pan loosely with plastic wrap and let it rise in a warm spot, ideally next to the preheated oven, for 30 minutes. The dough should significantly double in size. This is a great time to prepare your luscious cream cheese frosting.
- After 30 minutes, remove the plastic wrap and gently brush the tops of the cinnamon rolls with the 2 tablespoons of milk. This helps create a beautiful golden crust.
- Bake the rolls for approximately 22 minutes, or until they are golden brown on top and cooked through. If the tops appear to be browning too quickly before the rolls are fully baked, loosely place a piece of aluminum foil over the pan to prevent burning. Continue baking for an additional 3-4 minutes, or until done.
- To make the frosting: In a mixing bowl, soften the cream cheese and 4 tablespoons of butter in the microwave for about 30 seconds. Using an electric mixer, beat until smooth and creamy. Gradually add the powdered sugar and vanilla extract, mixing until fully combined and the frosting is light and fluffy.
- Once the cinnamon rolls have cooled for a few minutes (they should still be warm, but not piping hot), generously frost them. Frosting them too soon will cause the frosting to melt completely and become runny.
Note: If you are unable to find the exact Pillsbury Hot Roll mix I used, I cannot guarantee identical results with another brand of boxed bread mix. While it may work, this recipe has only been tested with the specific mix mentioned. If you absolutely cannot locate it, you can substitute any pre-made yeast dough (like frozen bread dough) and simply skip steps 2, 3, and 4 in the instructions.
For this recipe, I used this 10.25-inch cast iron skillet. However, any 9 or 10-inch baking dish will yield delicious results.
