Braised Beef with Tomatoes and Gnocchi
Ingredients
- 2 and 1/2 pounds Beef Chuck Roast, I use organic, grass fed for the best results!
- 2 14.5 ounce cans Muir Glen Organic Diced Tomatoes
- 3 large cloves garlic, minced
- 1/2 medium onion, thinly sliced
- 3/4 cup tomato juice
- salt + pepper
- 1/2 tsp dried thyme
- 2 packages gnocchi, mine were 17.6 ounces each
- 3 tbsp butter
- fresh parsley, for serving
- grated parmesan, for serving
Instructions

1. Prep: Preheat your oven to 325 degrees Fahrenheit (160°C). Retrieve a large, heavy-bottomed Dutch oven, which will be your vessel for this delicious braise.

2. Prepare the Braised Beef: Carefully trim any excess fat from your beef chuck roast. Generously rub the beef on all sides with salt, pepper, and dried thyme, ensuring it’s evenly coated. Place the seasoned beef into the Dutch oven. Pour both cans of Muir Glen Organic Diced Tomatoes (do not drain them, as their juices contribute significantly to the sauce) over the beef. Scatter the minced garlic and thinly sliced onion around and on top of the beef. Finally, pour the tomato juice over all the ingredients.

3. Cook to Perfection: Cover the Dutch oven tightly with its lid. Transfer it to the preheated oven and let it cook for approximately 1.5 to 2 hours. Start checking for tenderness at the 1.5-hour mark. The beef is done when it’s incredibly tender and can be easily shredded with a fork, or when a meat thermometer inserted into the thickest part registers between 145°F and 160°F (63°C to 71°C) for medium-rare to medium. Once cooked, remove the Dutch oven from the oven, shred the beef directly in the pot using two forks, and stir everything together to combine the tender beef with the rich, saucy tomatoes. Taste the mixture and adjust seasonings (salt, pepper, or a pinch more thyme) if desired.

4. Serve and Store: While the beef is braising, prepare your gnocchi according to package directions. Typically, this involves boiling them until they float to the surface. Drain the cooked gnocchi and return them to the empty pot. Add 2-3 tablespoons of butter to the pot with the gnocchi, setting the heat to low to gently melt the butter. Stir gently until the gnocchi are beautifully coated in the melted butter.
