These festive Easter blondies are EVERYTHING. Thick, buttery, caramely (thanks to a ratio of ALL BROWN SUGAR), and topped with a robins egg candy frosting – just try to stop at one!

Ingredients

Blondies

  • 2 sticks salted butter, softened (Melting the butter works here, too.)
  • 2 cups + 3 TBSP brown sugar, packed
  • 1 TBSP real vanilla extract
  • 3 eggs
  • 1 egg yolk
  • 2 and 1/3 cups all-purpose flour
  • pinch of salt
  • 1 1/4 tsp baking powder

Frosting

  • 11 TBS salted butter, softened
  • 1 1/2 cups powdered sugar
  • 2 TBS maple syrup
  • 1 tsp real vanilla extract
  • 1 tbsp milk
  • 1 bag Robin Eggs candies (Cadbury chocolate mini eggs would work well too!)

Instructions

  • 1. Prep: Preheat the oven to 350°F (175°C). Line a 9×13 baking dish with parchment paper or spray with non-stick cooking spray. Set aside.
  • 2. Make the Batter: In a large mixing bowl, cream the softened butter until very creamy, about 2-3 minutes. Add the brown sugar and continue mixing until the mixture is light and fluffy, another 2-3 minutes. Incorporate the vanilla extract, whole eggs, and extra egg yolk, mixing just until combined. Gradually add the all-purpose flour, salt, and baking powder, mixing until a thick batter forms and no dry streaks remain. Be careful not to overmix. Spread the thick batter evenly into your prepared baking dish. Note: If using melted butter, simply whisk in the sugars, then whisk in the eggs and vanilla. Stir in the dry ingredients last.
  • 3. Bake: Bake for approximately 32-38 minutes, or until the edges are golden brown. A toothpick inserted into the center should come out with some moist crumbs, but no wet batter.
  • 4. Make the Frosting: While the blondies are cooling, prepare the frosting. In a medium mixing bowl, cream the softened butter until smooth. Gradually add the powdered sugar and mix until fully incorporated and smooth. Stir in the vanilla extract, maple syrup, and milk until the frosting reaches a creamy consistency. Crush about half of the Robin Egg candies in a ziplock bag using a rolling pin. Fold these crushed candies into the frosting.Ensure the blondie bars are completely cooled before frosting. Applying frosting to warm bars will cause it to melt. Once frosted, cut the blondies into squares and top each square with a few whole Robin Egg Candies or additional crushed pieces for extra festive flair. 
  • 5. Serve + Store: Enjoy the frosted bars immediately after they are cooled and decorated. If you choose to skip the frosting, you can cut into the bars before they are completely cool, though they will hold their shape best once fully cooled. Store any leftover blondies, covered, at room temperature for up to 2 days, or in the refrigerator for up to 5 days.

VARIATION: For a delicious twist, use Reese’s Eggs! Spread half of the blondie batter into the prepared pan, then place 9 small Reese’s Eggs (refrigerate them first for about an hour) on top of the batter without pressing them down. Dollop the remaining batter over the eggs and gently spread to cover. Bake as directed. You won’t need frosting with this peanut butter-filled delight!
