Marinated lamb is grilled until tender, with Greek-inspired flavors like lemon and oregano, and served in warm tortillas with fresh greens, tomatoes, cucumbers, red onion, and tzatziki. It’s an easy and delicious summer meal!

Ingredients

Marinade

  • 1 lb American lamb stew meat
  • 2 tsp minced garlic
  • 1 and 1/2 tsp dried oregano
  • 2 tbsp olive oil
  • Zest of half a large lemon
  • 2 tbsp lemon juice
  • Generous pinch salt + pepper

For Serving

  • Tortillas (flour or corn)
  • Cucumber, chopped
  • Roma tomatoes, diced
  • Red onion, sliced
  • Fresh greens (romaine, butter lettuce, or spring mix)
  • Tzatziki (store-bought or homemade)
  • Feta cheese, crumbled (optional)
  • A squeeze of fresh lemon juice (for finishing)

Instructions

  1. Marinate the Lamb: Add the lamb stew meat to a resealable container or a sturdy bag along with all the marinade ingredients (minced garlic, dried oregano, olive oil, lemon zest, lemon juice, salt, and pepper). For an accurate check, cut into one of the larger pieces; if it’s done, the smaller pieces should be as well. Smaller pieces will tend to be well done, while larger pieces can be medium-well. The USDA recommends an internal temperature of 145°F for lamb, followed by a 3-minute rest for optimal tenderness and safety.
  3. Assemble and Serve: While the lamb is cooking or resting, gently warm and char your tortillas. Lay out all your prepared fixings: chopped cucumber, diced Roma tomatoes, sliced red onion, fresh greens, and a bowl of tzatziki.
